E’ un taglio di carne molto pregiato. E’ una fascia di muscoli tenerissimi che si trovano dietro la lonza. Ha una forma sottile ed allungata, carne molto magra, ha un colore rosso intenso. Richiede una cottura semplice e veloce: lasciatelo pure intero se volete cuocerlo al forno come un arrosto, oppure tagliatelo a fettine e cuocetelo sulla piastra. Ricette consigliate: medaglioni di filetto al gorgonzola, medaglioni con salsa al vino, arrosto di filetto con i funghi porcini, raclette.
